Born from the same grapes used for Sciala even if harvested later and must remain in contact with the skins for 12/24 hours at a temperature below 10 ° C. Fermentation (with the contact of the lees) takes place for 50% in large French oak barrels not toasted and 50% in steel and cement tanks. The mixture then evolves with its yeasts in stainless steel and cement tanks for six months, in contact with its lees. Finally rest in the bottle for at least 9 months.
