Obtained from indigenous grapes, after a short maceration, a soft pressing and a cold static clarification, the must ferments in stainless steel tanks at controlled temperature. In the spring following the harvest it is bottled with draft syrup and selected yeasts, where it remains for at least twenty-four months at a constant temperature for the second fermentation, followed by another two months after disgorgement.
