Made from 100% Vermentino grapes, after a soft pressing and a cold static clarification of the must, it ferments in stainless steel tanks at a controlled temperature. In the spring following the harvest it is bottled with draft syrup and selected yeasts, where it remains for at least twenty-four months at a constant temperature for the second fermentation, followed by another two months after disgorging.
